This olive oil from Haute Provence AOP is obtained exclusively in our mill from olives harvested by our organic farming approved producers on the olive groves in the territory of Haute-Provence. Our soil, our single cold-pressing technique as part of organic production, the know-how acquired by different generations since the founding of our oil-mill in 1928 all combine to bring you an olive oil with the following criteria:
Varietal composition: The Aglandau variety dominates associated with the Bouteillan variety.
Quality and intensity of fruity aroma: Intense green fruity aroma.
Organoleptic qualities and culinary associations: A pleasant oil with hints of mown grass, banana and hazelnut. Very slight sharpness and bitterness. The light quality of this oil makes it possible to use it in all dishes.
Physico-chemical characteristics: The maximum acidity is 0.3% (0.8% specifications). This quality Extra Virgin olive oil is obtained by a single cold-pressing in our mill. The freshness and quality of the crushed olives give our oil a high content in anti-oxidants - olive oil’s natural preservatives for its renowned health properties.
