This olive oil from France is obtained exclusively in our mill from olives harvested by our producers on the olive groves around Manosque. Our soil, our single cold-pressing technique, the know-how acquired by successive generations since the founding of our oil-mill in 1928 all combine to bring you an olive oil with the following criteria: Varietal composition: The Aglandau variety dominates associated with other local varieties such as Colombale, Rosée du Mont d'Or, Grappier as well as Picholine, Tanche and Bouteillan.Quality and intensity of fruity aroma: Median green fruity aroma.Organoleptic qualities and culinary associations: a pleasant oil with a flavour of artichoke, tomato leaves and hazelnut. The sharpness and bitterness are not very pronounced and in the same way as all the olive oils from Moulin de l'Olivette, this oil has a very vegetal smell. A sensation of fullness dominates in the mouth. This oil will flavour all your salads and will give a final touch when cooking certain dishes (vegetables, fish, etc.). It is an olive oil which allows the oil-presser, outside the stricter AOC criteria, to associate different varieties of local olive from Haute Provence to give them, through the oil obtained, all their substance. Enjoy it!Physico-chemical characteristics: The maximum acidity is 0.4% (0.8% specifications). This quality Extra Virgin olive oil is obtained by a single cold-pressing in our mill. The freshness and quality of the crushed olives give our oil a high content in anti-oxidants - olive oil’s natural preservatives for its renowned health properties.
